Bacon, Potato & Leek Soup
To make: Chop bacon/ham, and fry until crisp. Bring 8 cups of water to boil in a large pot. Add bacon/ham, Soup Mix, and (optional) white wine, and simmer for 45 minutes or until vegetables are tender.
Remove from heat; remove bay leaves, add cream or milk. Garnish with fresh cilantro or parsley.
Makes 8-10 servings.
