Cheesy Cauliflower-Potato Soup
To make: In a large pot combine water, cauliflower, and Cheesy Cauliflower-Potato Soup Mix and bring to a boil. Simmer for 30 minutes or until vegetables are tender. (Optional: Purée in a blender.)
Return to pot and add soy sauce, cream, and parmesan cheese. Heat to serving temperature. Add water or milk if the soup is too thick. Serves 10-12. Garnish with fresh parsley.

This is beyond delicious. I’m not usually a cauliflower fan but this has converted me! Made lots of servings with just one cauliflower, and it was easy to add things if I felt like it when taking it out of the freezer (chunk of cheddar once, some goldfish crackers another). Seriously, I’m addicted.
