Hearty Vegetable Soup

You add: 1 (28oz/796mL) can of diced tomatoes, 12 cups of water, 6 cups of tomato-vegetable juice, and 1 leek chopped.

To make: In a large soup pot combine Hearty Vegetable Soup Mix package & water. Bring to a boil, reduce the heat, and simmer for 90 minutes or until vegetables are tender.

Add diced tomatoes, leek, and tomato-vegetable cocktail juice. Bring to a boil. Lower the heat and simmer for 20 minutes or until leek is tender. Serves 10-12.
