Cream of Mushroom Soup

To make: Place water and mushrooms in a large pot; bring to a boil, lower the heat, and simmer for 20 minutes or until tender. Remove 1 cup of sliced mushrooms and set aside.
Use small white mushrooms or any of your choice. Allow longer cooking time if using dried mushrooms. Add Cream of Mushroom Soup Mix. Simmer for 20 minutes.
With a hand blender or potato masher, puree or cream the soup. Return mushrooms to pot; add cream and (optional) wine. Warm for 2 minutes.
Makes 10 servings. Garnish with fresh parsley.

This was my 3rd and I made it tonight – yummy and again great portion size! Next time I will add more and a variety of mushrooms as i really like it to be full of mushrooms – and no my son would not touch this one with a 10 foot pole – lol

we love this soup, including our granddaughter! I add lots of mushrooms, I’ve found a mixed variety and only chop up the larger ones.
